Avantages

Le sarrasin a un grand intérêt agronomique dans la rotation : il valorise très bien les terres pauvres et peut s’installer en culture principale pour la production grainière ou en interculture d’été.
C’est une plante étouffante qui limite les adventices par effet allélopathique.
Bonne coupure dans la rotation (très grande capacité de pompage de l’azote et du phosphore), le sarrasin est également un bon précédent à céréales qui se détruit facilement.
